It doesn't work like that - Samehada connects to all the reiatsu/reishi being put out, including that of attacks and defenses. Attacks and defenses based on chakra/reiatsu/reishi are nigh-useless, considering how Samehada can just absorb them entirely (as seen with the casual ease Kisame shut down Bee's v2 Cloak). Considering Kenpachi's whole schtick is based on attacking through his absurd reiatsu, and his defense is based on reiatsu.Of course, there's a limit to how quickly Samehada can absorb reiatsu, which is why this isn't a complete stomp.
But those limits are very high - Kenpachi's incredible defense is because of the reiatsu/reishi he has, which Samehada will just eat through. The same with his attacks (as seen in the provided vid and manga). The energy obtained through the drain is also used by Kisame to heal and rejuvenate himself.Kenpachi's defenses won't count against Samehada's blows, his attacks will be eaten up, etc. It's why I believe Samehada's the decider here. The key difference between Kenpachi and the Bijuu guys is that Kenpachi's output is entirely incidental and a natural byproduct of kenpachi just living. The Bijuu have to exert effort to maintain that energy as well as a certain degree of concentration. Sameheda requires directly physical contact (as we've already seen) to absorb anything except what's being radiated outside the body unless Sameheda (or Kisame) is touching Kenpachi.Additionally, the eyepatch creature thing is the difference between minor divots and cuts in stone to accidentally cleaving buildings in two or splitting building-sized boulders in two with a small touch.
I'm not going to say Kenpachi won't notice Sameheda but it's not an instant I-win button for Kisame.Can kisame win? If he's smart and doesn't try to get into a power struggle with Kenpachi. But if he gets cocky and smacks Kenpachi with a blade and stands there like he's tried before he will get cleaved in two. Except if you check the next pages, you'll see that Samehada sucked the chakra even then - Kisame just failed to dodge it (which says more about Bee's speed than anything).It's fast, and Samehada sucked the chakra equivalent of 6 tails in the beginning, and then an appreciable fraction of power 9 times that of the 6 tails. Considering Kenpachi's firepower in the manga can barely match (if at that) Naruto's 4-tailed transformation in terms of energy yield.Yeah, I'm not seeing his reiatsu attacks managing much.

More seriously though Kenpachi loses. Badly.His pure raw energy style is the worst possible matchup for Kisame.You can argue about how Samehada's energy absorption has a slight delay all you like but that doesn't change the fact that it does absorb insane amounts of energy and that with it Kisame gets even more insane regeneration. Kenpachi may be amazingly strong but as Kisame put it 'When I'm faced with an amazingly strong opponent I'm also getting stronger in the same proportion. I won't tire and I won't die.' And on top of that Kenpachi is all power with barely any skill and no notable feats when it comes to swimming (we don't even know if he can swim) so there's no way in hell you can argue that he's better at fighting underwater than Kisame is which is where this battle is going to take place. And when he's fused with Samehada any time he touches Kenpachi or Kenpachi touches him he's going to drain a shitload of energy from him.
